I have days that I just start craving a food that usually is served as a side dish. But Hey....sometimes you just want that ONE thing. I am not talking about a snack item, like an apple or a carrot. I am talking about a food item that you have to prepare, but that's ALL you prepare. There you have it, I am craving potato salad.
Am I having a picnic? NO! Am I cooking a Ham? No! Am I cooking BBQ? NO! I just want some potato salad!
My recipe is a recipe that has basic ingredients that you have in your kitchen and doesn't contain ingredients that someone in the family turns their nose up to. Believe it or not, it is still very tasty.
I have been told by people that will not eat potato salad, that they love mine and ONLY eat mine! Picture me smiling!
6 Russet Potatoes
1/4 cup Mayonaise
1/8 cup Thousand Island Dressing
Drizzle of Mustard
Salt/Pepper to taste
Cayenne pepper for Garnish
Boil potatoes and eggs until done.
Allow to cool. I cook mine the day before and place them in the refrigerator.
Peel potatoes and eggs
Cube potatoes and 3 Eggs
Add Mayo, Dressing, Mustard Salt/Pepper.
Fold all ingredients together
Garnish with egg, cayenne pepper, pickles
Pickle, onions and celery can always be served on the side!
