Pineapple Pound Cake

Knowing that Pound cake is one of my favorite home made cakes, I discovered a recipe by Served up with Love.  I truly get inspired by the blogs I follow.

Pineapple Pound Cake 

Ingredients:

1 can crushed pineapple 
1/2 cup vegetable shortening
1 cup butter
2 cups granulated sugar
6 eggs
1/4 cup milk
3 cups all-purpose flour
1 tsp baking powder
1 tsp vanilla extract

Directions:

Cream shortening, butter and sugar together
Add eggs, one at a time, beating well after each one

Sift flour and baking powder together 
Add flour mixture to cream mixture alternating with milk
Add vanilla
Add 3/4 can crushed pineapple, undrained
Mix well for 4 minutes
Pour into greased tube pan
Place in cold oven
Turn oven to 325°
Bake for 1 1/2 hours
Remove from pan after a few short minutes


Pineapple Topping

Ingredients:

1/4 cup butter
1 1/2 cup confectioner sugar
1 cup crushed pineapple, drained

Directions:

Melt butter on cook top
Add drained pineapple
Pour over cake while still hot
