Grilled Redfish smothered in Vegetables

I love it when my husband brings home the dinner!  Especially when it is fresh fish....


Louisiana has some fantastic REDFISH!  My husband recently visited Salt Grass Lodge, located in Venice, LA, caught some and brought them home!

How do you prepare yours?  I like to Grill mine.  You know how I am with the quick and easy! 




Grilled Redfish smothered in Vegetables

Ingredients:

1/2 each -  Red and White Onion
Zucchini
Squash
Pepper-Green, Red, yellow
Redfish Fillets
Olive Oil - Drizzle or spray
Lemon Juice - Drizzle
Salt & Pepper to taste
Cajun Seasoning
Sweet Pepper - Dash

Directions:

Place fillets on foil
Spray fish fillets with Olive oil
Sprinkle with Lemon Juice
Salt & Pepper to taste
Place chopped up veggies on top
Season with Cajun Seasoning
Season with Sweet pepper
Seal up the foil
Place on grill
Cook for 15-20 minutes

Carefully unwrap!












Add a baked potato and eat up!
