Skillet Chocolate Chip Cookie

I have had skillet cornbread all my life, but when I saw a recipe from Flavors by Four for a chocolate chip cookie in a skillet, I had to make it.  Some may call this a 'Blondie'.

Skillet Chocolate Chip Cookie
 
Ingredients:

2 cups flour
1 cup light brown sugar
2 eggs
1/2 cup sugar
2 sticks butter
1 tbsp baking soda
1 tsp salt
2 tsp vanilla
1 1/2 cup semi-sweet chocolate chips
 
Preheat oven to 375°
 
Directions:
 
Lightly butter 12" skillet
Combine flour and baking soda
In skillet, heat 1 1/2 sticks butter till melted
Cook in skillet until light brown
Remove from heat
Stir in remaining butter
Pour butter into large bowl
Add sugars, salt and vanilla to butter
Continue stirring
Add eggs 
Whisk until all is combined
Let mixture stand for 3 minutes then whisk again.  (repeat 2 times)
Stir in flour
Place mixture into skillet
Bake for 20-30 minutes until done in the middle

Cut and serve!  Taste great with Vanilla Ice Cream and Caramel Sauce.
