2 cups sugar
1/3 Light Corn Syrup
1/2 cup Water
2 Egg Whites
1 tsp Vanilla Extract
1/2 cup Pecans Chopped
Combine Sugar, Corn Syrup and Water in 4-6 cup Microwavable bowl
Cook on HI for 3 minutes
Beat egg whites until stiff while continuing to cook syrup
Cook on HI for 6-8 minutes or until a small amount of syrup forms a ball in cold water
SLOWLY pour syrup into the egg whites continuously beating on high
Beat until mixture looses it's shine-could take 8 minutes
Fold in Nuts
Drop by spoonful onto wax paper
Okay so there you have it, Good luck! Divinity is finicky...
This year, mine never wanted to whip up enough to spoon out. I decided to beat a little longer with the nuts already folded in. This caused the nuts to become completely embedded in the mixture, not just folded in. When I drop them on the wax paper, guess what? They still were not firm enough, so I decided to use a Back Up Plan!
TA-DA I just place a Whole pecan on the top of each spoon drop and they did actually firm up over night! I know they don't look like your typical piece of divinity, but hey they taste just the same and I believe they are somewhat unique!
