Pumpkin Sheet Cake



Tis the season for Pumpkin!  Knowing that this is my daughter's favorite season of the year and how she loves pumpkin, I recently made her a cake that I believe she will make over and over and over.  Yes it is THAT good!

Pumpkin Sheet Cake
 
 
Preheat your oven to 350°


Ingredients:
 
1 can Pumpkin or 2 cups fresh pumpkin
2 cups Sugar
1 cup Vegetable Oil
4 Eggs - beaten
2 cups Flour
2 tsp Baking Soda
2 tsp Cinnamon
1/4 tsp Nutmeg
1/2 tsp Salt
 
 
Directions:
 
Beat Pumpkin, Sugar and Oil
Add eggs
Combine dry ingredients
Add dry ingredients to the wet
Beat until well blended
Pour into 9x13 baking pan
Bake for approximately 35 minutes (until toothpick inserted pulls out clean)

Cream Cheese Icing 
 
Ingredients:
 
1 stick Butter (softened)
8 oz Cream Cheese (softened)
1 tsp Vanilla
2 1/2 Powder Sugar
1/4 cup Heavy Whipping Cream
 
Directions:
 
Mix all ingredients until well blended. beating for 5 minutes.  Add powder sugar or Cream as need for desired consistency.
